Orzotto: Pearl Barley, Pork & Spinach “Risotto”

I guess this dish got its name from the small pearl pasta called orzo. I’m using an ancient grain pearl barley filled with goodness instead.

Creamy pearl barley with pork and spinach cooked in the risotto-style.
Ingredients
  • 2 cups pearl barley
  • 1 onion, finely chopped
  • 1/4 pound ground pork
  • 4 tablespoons extra virgin olive oil, plus more for garnish
  • 1/2 cup dry white wine
  • 6 cups water or stock added one cup at a time
  • 2 cups spinach, cut in 2-inch ribbons
  • 1/2 cup Italian flat parsley, chopped for garnish
Instructions
  1. Put 3 tablespoons extra virgin olive oil in a large enameled pot over medium heat.

  11. Keep adding 3 more cups of stock in this way.
  12. When you add the last cup of stock add the spinach and 1 tablespoon of olive oil and stir well into the barley.
  13. After a minute or so the barley will be covered in a creamy sauce.
  14. Pour out the risotto into individual serving bowls and top with parsley and a drizzle of olive oil.
  15. Serve immediately.
