Crispy Baby Artichokes
I love these easy to make crispy golden fried baby artichokes. They are a reminder of Italian celebration of artichokes. These little nuggets will shine as part of an antipasti. You can use them as a side dish but be sure to pair them with a main course that can hold up to their distinctive taste.

Baby artichokes crisped in hot extra virgin olive oil served with a sprinkle of sea salt and a squeeze of lemon. Simply delicious.
Ingredients
12 baby artichokes
bowl of water with the juice of a lemon
3 tablespoons extra virgin olive oil
sea salt
1 lemon cut into small wedges
Instructions
Clean the tough outer leaves off each artichoke until the light green-yellow leaves are exposed.
Trim the dark green off the stem.
Cut off the dark leaves at the top of the artichoke.
Put the cleaned artichoke in the bowl of acidulated water.
Put a pot of water over high heat and bring it to a boil.
When the water is rapidly boiling add the artichokes and boil until they are knife tender.
Take the artichokes out of the water and set them on a plate to cool.

Cut the artichokes in half.
