A group of 15 who work together at IGT in San Francisco asked me to do a team building pizza demonstration for them. We gathered at Cookhouse for a few fun-filled hours.
I put together an antipasti with salumi and cheeses, roasted peppers, olives and taralli to munch as I showed them how to roast peppers on top of the stove.
Next, everyone got their hands dirty as we mixed and kneaded the pizza dough and arranged all the toppings. They wanted me to make a pizza margherita and my famous pear, prosciutto, gorgonzola and mozzarella pizze. I had to show them the smoked mozzarella pizza bianca topped with arugula lightly dressed with EVOO after it came out of the oven. This was a pizza I learned from Anthony Mangieri at Una Pizza Napoletana the week before.
In no time the IGT co-workers were quick learners and one at a time they formed their pizza, threw it on the peel and added their favorite toppings. Some even mastered transferring the pizza from the peel onto the hot pizza stone. We must of made about 15 pizzas and there wasn’t a single slice left over.
There was plenty of pizza dough and toppings to take home to show off their new pizza-maker skills.
But before we ended our time together we had to enjoy the crema I made–a custard topped with cherries from Modesto cooked just enough to create a natural syrup to drizzle over the crema. A light end to our pizza adventure!
As you can see from the pictures we all had a great time and I think the IGT team was a stronger work group after making pizza together!
