I love Lidia. I watch her PBS shows, I visit Eataly, her Italian food emporium, whenever I’m in Manhattan. I have just about every one of her books. Here are 2 I use often but I recommend any of her tomes. Her recipes are simple and reflect her slow food philosophy.

The Fine Art of Italian Cooking
Giuliano was one of my earliest teachers. He is adept at choosing classic dishes and providing authentic techniques and direction. His explanation of the food’s cultural and historical context is amazing. I still use the 1977 first edition often. Here’s a link to the current updated and expanded edition.
The Foods of Italy
A beautiful coffee table sized book, Bugialli includes classic regional recipes from dishes that he discovered as he travelled all around Italia researching this book. The photographs in this book are beautiful.
The Foods of Naples and Campania
Another coffee table sized book, this is one of my two favorite Neapolitan cookbooks. (The other is Arthur Schwartz’ Naples at Table.) This book is a continuation of Bugialli’s culinary tour of Italia series. Great authentic recipes and fantastic photos.

I had the opportunity to spend time in with Marcella, her husband Victor, and her son Giuliano in and out of the kitchen a long while ago. I still cherish the cookbook she signed for me and I use it frequently. Marcella opened up a new world of authentic Italian cooking. She helped expand my repertoire beyond the Italian-American cuisine I was most comfortable making. She also introduced me to the amazing array of artisanal Italian food products that were difficult to find in the U.S. back then.
Essentials of Italian Cooking
This is the book that really changed the perception of Italian food in America, much like Julia’s first tome. Marcella celebrated the authentic cooking of Italy that was largely unknown to those familiar with Italian-American cooking.

In the preface Marcella shares her philosophy about authentic Italian cooking, her cultural Italian food insights and some rules in the Italian kitchen. The recipes are more accessible to a newie but start with Essentials first.
